Katelyn Roldan

Katelyn manages Traveling Eagle,  The Navajo Travel Center & assists with Goulding’s Lodge operations. Her major focus is assisting with projects for Monument Hospitality’s managed hotel properties.

Katelyn is passionate about food and traveling. She is originally from Honolulu, Hawaii. She goes back as often as she can to visit her family, eat her favorite local dishes, and spend some time at the beach. Although she loves her island home, she wants to see the world. During her college years, she studied abroad in Verona, Italy. While abroad, she was able to travel to places like Rome, Santorini, Barcelona, Nice, and Zadar. She loves to try new foods both at home and abroad. Her favorite cuisines to cook are Italian and Asian. Two of her go to recipes are eggplant parmesan meatballs and Panang curry short ribs.
